A classic gin sour is truly a thing of beauty: it’s punchy, smooth, sophisticated and a little fruity, all at the same time. For this recipe we’ve used Beefeater Black, to really lean in to the citrus notes, but Beefeater London Dry Gin works exceptionally too. Don’t be frightened by the egg white! A good hard shake without ice will emulsify it perfectly.

50 ml

Lemon juice

25 ml

Sugar syrup

15 ml

Egg white

How To Make a Beefeater Black Gin Sour

Pour

Pour your Beefeater Gin, sugar syrup, lemon juice and egg white into a shaker without ice

Shake

Shake hard, without ice, to emulsify the egg white

Ice

Add ice to your shaker

Shake again

Now shake with ice to chill and dilute the mixture

Pour

Strain into your ice-filled rocks glass

Garnish

Drop three droplets of bitters onto your foam to garnsih
