Gin & Pineapple Punch
Step 1.
Start by making the spiced pineapple tonic syrup – bring 1L tonic water, 300g muddled pineapple cubes, 50ml pineapple juice, 3 cloves and 2 star anise to the boil for 5 minutes. Simmer on a medium heat for a further 10 minutes until you form a syrup. Allow to cool, then strain.
Step 2.
Add hot water, Beefeater London Dry and spiced pineapple tonic syrup to a mug, garnish and serve.
