A twist on the classic Ramos gin fizz - substituting soda with champagne soda adds a luxurious, celebratory feel. The addition of a thyme syrup & Ricard rinse brings an aromatic/ anise note with a luscious mouthfeel.

45ml Beefeater London Garden
25ml Thyme syrup
1x Egg white
25ml Mumm Champagne
How to make a
Step 1. Lemon thyme syrup recipe: 15ml lemon thyme sprigs simmered in a saucepan with 250ml water for 5 minutes. Add 500g caster sugar and dissolve. Allow to cool and fine strain. Store in fridge.
Step 2. Rinse the flute with Ricard and discard excess liquid.
Step 3. Add all ingredients to a cocktail shaker and shake hard with ice.
Step 4. Fine strain into flute and top with Champagne.
