Now rested in red and white Bordeaux oak casks after distillation, Edition 2 emerges with -
a copper hue and complex depth of flavour, making it perfect for those looking to explore new flavour experiences. Each batch created is unique. A product of our hand-crafted approach to distillation. We only create a limited number of bottles for release, so if you see one, buy one. You won't be dissapointed.
Made by hand
Oak rested in small batches
Distilled using James Burrough's original copper “Still Number 12”, Burrough's Reserve Edition 2 gin is then rested in red and white Bordeaux oak casks. With a capacity of only 268 litres, "Still Number 12" produces small batches of this complex gin, with each batch being intriguing in its own right. The result of the resting period is a remarkable transformation, imbuing the gin with the subtle characteristics of the oak and residual Bordeaux red and white wines.
Soft, oak spice, balanced by the sweet, fresh aroma of juniper and citrus.
Rich, juniper-lead spice develops into the softer notes of oak and showing a hint of dried fruit and liquorice on the finish. Long and complex, the flavours continue to evolve on the palate.
The unique shape and size of James Burrough's original copper still gives a distinctive character to this exceptional gin.

With Alex James' artisan cheeses
Pairing Burrough's Reserve Edition 2 with a selection of artisan cheeses is the final touch to a digestif occasion. Suggestions:
- Goddess; its buttery taste brings out the oaky character and citrus notes of the gin.
- Little Wallop; soft citrus, nutty and savoury flavours fill the palate when paired, as sweet notes of the gin come through a little later.
- Farleigh Wallop; drier, sharper notes of Burrough's Reserve Edition 2 are accentuated as the thyme on the cheese pairs with the woody tannin cask notes.
- Blue Monday; its salty yet creamy profile draws out the sweetness of the gin, bringing hints of liquorice to the fore.
Serving Burrough’s Reserve with a selection of fresh stoned fruit such as apricots, peaches, and cherries brings forth different elements of its complex and rich finish. This allows the drinker to experience the full flavour and aroma profile of this sophisticated gin.
