In honour of 2025’s Negroni Week we worked with Shantelle Pearce, @shethebartender, to create this exclusive cocktail recipe. It’s the softer, more approachable aperitivo version of the classic Negroni. Each ingredient is carefully tweaked and balanced to get you to a well rounded, highly drinkable Negroni twist. By using the classic English flavour combination of strawberry with rhubarb, we’re converting this from an Italian icon to a British one.

Rhubarb Infused Beefeater London Dry Gin

35 ml

Strawberry Infused Campari

35 ml

Sweet Vermouth

25 ml

How To Make a Strawberry Rhubarb Negroni

Infusion 1

2 Large Rhubarb stalks cut into inch-long pieces left to soak overnight with a full bottle of Beefeater Gin in an airtight container

Infusion 2

1 ounce of freezedried strawberries left to soak overnight with a full bottle of Campari in an airtight container

Pour

Pour your ingredients into a mixing glass with ice

Stir

Mix gently to combine

Pour

Pour over ice into your rocks glass

Garnish

Garnish with a twist of rhubarb
